Gregg is a blended saison consisting of two threads: the first a mixed culture spelt saison we brewed in May 2019 dry hopped with Vic Secret and Enigma and fermented in stainless steel, and the second a mixed culture wheat saison brewed six months later fermented in an oak foeder. The saisons were combined in a foeder in late 2019 and matured together until bottling and naturally conditioning in summer 2020.
